Growing up in Southern California, it’s no surprise that Chef Dominic Giuliano would visit Mexico on a regular basis. What first began as quick jaunts across the border soon became a deep interest in the culture and stops at random roadside taco stands deepened Dominic’s affection for the country’s cuisine.
Armed with these hyper-local experiences and an increased interest in Mexican food, Giuliano began to frequent the country, traveling across regions on a quest for the most delicious and authentic dishes. He was clearly hooked!
After professional training and many years in fine dining kitchens, Giuliano made the decision to focus on what he’s most passionate about – authentic, Mexican food. The result is a menu of simple, authentic regional specialties prepared with the exacting techniques the chef has perfected throughout his career.
HOW IT STARTED

The menu at Tacos Diablo is a perfect mix of fresh, fun and festive street food that embodies Giuliano’s memories of Mexican roadside stands – the warmth, the aromas and the flavors. That means authentic fillings like barbacoa (fall-apart braised beef in the traditional slow and low and style), carnitas (slow-cooked pork with chiles, citrus, garlic and herbs), pollo verde (all-natural chicken with tomatillos and chiles), and seasonal vegetarian options like roasted yellow and green squash with garlic. And an array of Mexican sodas and amped-up drinks (Jalapeño Lemonade, anyone?) round out the menu.
